Potato Puffs
| 3 slices of sandwich bread |
1 egg |
| 1 cup mashed potatoes |
1 cup cheese, grated |
| 1 – 2 Tbs onion pulp |
½ cup bacon, chopped |
| salt and pepper to taste |
small pinch of paprika |
Pre heat oven to 190 degrees Celsius.
- Peel, boil and mash about 2-3 potatoes
- Butter the bread and cut off the crusts. Cut each piece of bread into quarters
- Press the squares of the bread (butter side down) into the bottom of muffin tins
- Make the onion pulp by scraping across the surface of the cut onion with a teaspoon or by grating it
- Mix the mashed potatoes with the onion pulp, cheese, egg and bacon then season
- Sprinkle with paprika. Bake for 20-30 minutes until bread cases are light brown.
