Supreme Fish Pie

1 Tbs oil |
| 1 onion |
A little cheese, grated |
| 1 tsp curry powder |
cheese sauce |
| 450gm tin smoked fish |
Salt and pepper to taste |
| 1 cup long grain rice |

Pre heat oven to 180 degrees Celsius.
- Fill a medium saucepan with water and 1 tsp salt and bring to the boil
- Add cup of rice or rice grains and cook until soft
- Drain the rice through a sieve and rinse with cold water or split the bag and drain in cold water
- In a non stick pan heat the oil and sauté the onion for 2-3 minutes
- Add the cooked rice and curry powder. Heat through, stirring often for 5-10 minutes
- Put the rice mixture into the bottom of an oven proof dish
- Drain the juices off the tin of smoked fish. Flake the fish with a fork and sprinkle on top of the rice
- Make cheese sauce (see cheese sauce recipe). Pour the cheese sauce evenly over the fish and rice
- Sprinkle with breadcrumbs and a little grated cheese. Place in the oven and cook for 20-30 minutes
