Supreme Fish Pie

Breadcrumbs 1 Tbs oil
1 onion A little cheese, grated
1 tsp curry powder cheese sauce
450gm tin smoked fish Salt and pepper to taste
1 cup long grain rice  

         Pre heat oven to 180 degrees Celsius.

  • Fill a medium saucepan with water and 1 tsp salt and bring to the boil
  • Add cup of rice or rice grains and cook until soft
  • Drain the rice through a sieve and rinse with cold water or split the bag and drain in cold water
  • In a non stick pan heat the oil and sauté the onion for 2-3 minutes
  • Add the cooked rice and curry powder. Heat through, stirring often for 5-10 minutes
  • Put the rice mixture into the bottom of an oven proof dish
  • Drain the juices off the tin of smoked fish. Flake the fish with a fork and sprinkle on top of the rice
  • Make cheese sauce (see cheese sauce recipe). Pour the cheese sauce evenly over the fish and rice
  • Sprinkle with breadcrumbs and a little grated cheese. Place in the oven and cook for 20-30 minutes
