Sweet and Sour Sausage Balls
| 1 onion |
1 Tbs oil |

500gm sausage meat |
| 425gm tin pineapple pieces |
¼ cup water |
| ¼ cup vinegar |
2 Tbs soy sauce |
| 2 Tbs brown sugar |
2 Tbs cornflour |
Your choice of vegetables: celery, carrots, peppers, cabbage, courgette, broccoli, cauliflower etc (approximately 2 cups)
- Chop the onion and prepare the other vegetables e.g. chop or slice finely
- Bring a medium saucepan full of water to the boil. Cut a corner of the sausage meat and squeeze into a small ball then place into the saucepan
- Continue this until all the sausage meat is used. Boil for a few minutes until cooked through. Remove and drain then set aside the sausage balls
- Heat a little oil in a frypan. Cook all vegetables lightly in the pan
- Combine juice from the pineapple, water, vinegar, sauce, brown sugar, cornflour and add to the pan. Heat until sauce boils and thickens
- Add pineapple pieces and sausage balls. Heat through
