Tomato and Pasta Salad
Tomato and Pasta Salad
2 spring onions, chopped
425gm tin tomatoes
250g pasta
2 Tbs white/wine vinegar
3 Tbs oil
1 Tsp salt
2 Tsp sugar
1 cup finely chopped celery
200gm tin tuna or salmon
Cook the pasta in a large pot of boiling water until just tender
Drain the pasta through a sieve and place the hot pasta in a plastic bag (no holes)
Mix all the other ingredients, (except tuna or salmon) together in a bowl
Add to the pasta in the plastic bag. Leave to cool, turning at intervals
Flake the tuna and mix gently with the pasta mixture, turning at intervals
Stand for 10 minutes before serving or refrigerate until needed (can be kept for 3 days)
