Tomato and Pasta Salad

2 spring onions, chopped 425gm tin tomatoes
250g pasta 2 Tbs white/wine vinegar
3 Tbs oil 1 Tsp salt
2 Tsp sugar 1 cup finely chopped celery
200gm tin tuna or salmon  
  • Cook the pasta in a large pot of boiling water until just tender
  • Drain the pasta through a sieve and place the hot pasta in a plastic bag (no holes)
  • Mix all the other ingredients, (except tuna or salmon) together in a bowl
  • Add to the pasta in the plastic bag. Leave to cool, turning at intervals
  • Flake the tuna and mix gently with the pasta mixture, turning at intervals
  • Stand for 10 minutes before serving or refrigerate until needed (can be kept for 3 days)
