Winter Chilli Hotpot

1 440g tin Chilli beans black pepper to taste
1 tsp oil 1 onion, chopped
2 cloves garlic, crushed 2 sticks celery, sliced
2 zucchini, sliced 250g mushrooms
2 400g tin tomatoes 1½ tsp vegetable stock
2 Tbs tomato paste 1¼ cup macaroni
1½ cups water  
  • Heat oil in a large saucepan, add onion and garlic, cook until soft
  • Add celery, zucchini, and mushrooms. Cook whilst stirring for 5 minutes
  • Stir in the beans, tomatoes, tomato paste, stock powder and water. Bring to the boil
  • Add the pasta, reduce heat and simmer for about 20 minutes until pasta is cooked

NB: If using dried beans, soak overnight covered in water. Drain. Boil in a large saucepan for 1-2 hours. Drain and set aside
