Fruity Oatcakes
| 1 cup rolled oats |
2 eggs |
| ¼ cup wheatgerm |
2 apples |
| 2 Tbs brown sugar |
50g butter |
| ½ cup flour |
¼ cup milk |
| 2 tsp baking powder |

- Measure the rolled oats, wheatgerm, sugar milk and eggs into a large bowl. Mix well
- Grate the apples and stir them quickly into the mixture before they go brown
- Melt the butter and stir into the mixture
- Measure the flour and baking powder and sieve into the mixture. Stir until just mixed
- Heat a frypan to a medium heat. Drop a spoonful of mixture into the frypan and let it spread. Add as many spoonfuls as will fit in the frypan
- Turn when bubbles form and burst on top. Cook the other side until lightly browned
- Keep warm and serve with butter and golden syrup if desired. Also delicious on their own
