Lemon Fruit Twist
| 2¼ cups flour |
3 tsp baking powder |
| 60g butter |
1 Tbs castor sugar |
| 1 egg, lightly beaten |
2 Tbs sultanas |
| ½ cup milk |
2 tsp lemon rind, grated |
| 2 Tbs mixed peel |
2 Tbs chopped glace cherries |
Sugar glaze
Pre heat oven to 180 deg Celsius and lightly grease an oven tray
- Mix 1 Tbs sugar and 1Tbs boiling water
- Sift the flour into a medium bowl and rub in the butter until the mixture resembles bread crumbs
- Stir in the sugar, sultanas and lemon rind. Reserve the lemon for icing.
- Beat egg and add to the flour mix and enough milk to mix a firm dough
- Knead on a lightly floured service until smooth
- Divide the mixture into 3 and roll each third into a roll about 40cm long
- Plait the 3 rolls together
- Place on tray and press ends together to form a round shape
- Bake for 20 minutes. Make sugar glaze. Remove twist from oven at end of 20 minutes and brush with sugar glaze the return to oven for 5 minutes
- Cool and then drizzle with lemon icing. Decorate with chopped peel and cherries.
- Serve warm
