Lemon Fruit Twist

2¼ cups flour 3 tsp baking powder
60g butter 1 Tbs castor sugar
1 egg, lightly beaten 2 Tbs sultanas
½ cup milk 2 tsp lemon rind, grated
2 Tbs mixed peel 2 Tbs chopped glace cherries

Sugar glaze

          Pre heat oven to 180 deg Celsius and lightly grease an oven tray

  • Mix 1 Tbs sugar and 1Tbs boiling water
  • Sift the flour into a medium bowl and rub in the butter until the mixture resembles bread crumbs
  • Stir in the sugar, sultanas and lemon rind. Reserve the lemon for icing.
  • Beat egg and add to the flour mix and enough milk to mix a firm dough
  • Knead on a lightly floured service until smooth
  • Divide the mixture into 3 and roll each third into a roll about 40cm long
  • Plait the 3 rolls together
  • Place on tray and press ends together to form a round shape
  • Bake for 20 minutes. Make sugar glaze. Remove twist from oven at end of 20 minutes and brush with sugar glaze the return to oven for 5 minutes
  • Cool and then drizzle with lemon icing. Decorate with chopped peel and cherries.
  • Serve warm
