Scones

2 cups of flour 50g butter
4 tsp baking powder ½-¾ cup of milk

          Pre heat oven to 200 deg Celsius.

  • Sift flour and baking powder into a medium size bowl
  • Rub in the butter with a pastry blender or the tips of your fingers until the mixture is like breadcrumbs
  • Make a well in the center of the mixture, pour most but not all of the milk into the well
  • Mix with a knife until dough is moist enough to form a ball, adding more milk if necessary
  • Roll or pat out to about 1½cm thickness. Cut into desired shapes. Place on a lightly floured tray and bake for 10-15 minutes.

Variations

Wholemeal scones

 Replace 1 cup white flour with wholemeal flour and make as above.

Cheese Scones

 Make as for scones but add 1 cup cheese, grated. Add before the milk is added. Mix, shape and cook as for scones.

Fruit Scones

 Make as for scones, adding 2 Tbs sugar and ¾ cup sultanas or chopped dates before the milk. Mix, shape and cook as for scones.

Cinnamon Pinwheels

 Make as dough above. Mix ¼ cup brown sugar and 2 tsp cinnamon together. Roll dough into a 30cm square. Brush with melted butter and sprinkle with cinnamon mixture. Roll up tightly and cut into about 12 slices.

Savoury Pinwheels

 Make as dough above. Roll dough into a 30cm square. Spread with tomato sauce or relish. Sprinkle with ½ - 1 cup grated cheese and cooked bacon if desired. Roll up tightly and cut into about 12 slices.
