Pumpkin Scones

PUMPKIN SCONES

50g butter    4 tsp baking powder
½ cup sugar    1 cup cooked, mashed pumpkin
1 egg, beaten    ¾ cup milk
2 cups flour  

          Pre heat oven to 200 deg Celsius.

  • Sift dry ingredients. Add sugar. Rub in butter.
  • Add cooked, mashed pumpkin and beaten egg.
  • Pour milk in a little at a time, mixing until dough is firm and not sloppy.
  • Pat out on a floured board or bench, and cut into squares.
  • Place on a cold, greased oven tray and bake at 200 deg Celsius for about 10 minutes.
