Vegetarian Nachos
| 1 Tbs oil |
1 cup chunky seasonal vegetables |
| 2 tsp crushed garlic |
400g tin tomatoes |
| 400g tin mild chilli beans |

| 1 cup grated cheese |
200g corn chips |
| 1 onion, chopped |
250g lite sour cream or natural lite yoghurt |
- Heat oil, then add onion and garlic, cook for 2 – 3 minutes’
- Add the seasonal vegetables
- Add the chilli beans
- Add the can of tomatoes
- Mix all ingredients in well and leave to simmer for 15 – 20 minutes, stirring occasionally
- Place the corn chips in a dish
- Cover the corn chips with the bean mixture and grated cheese
- Place under the hot grill for 5 minutes to melt cheese if desired. Serve with lite sour cream or yoghurt if desired
NB: Seasonal vegetables to use are: carrots, celery, green pepper, courgette, broccoli or cauliflower
Frozen chunky vegetable mix with carrots, broccoli and cauliflower is great to use as a substitute
