Vegetarian Nachos

1 Tbs oil 1 cup chunky seasonal vegetables
2 tsp crushed garlic 400g tin tomatoes
400g tin mild chilli beans
1 cup grated cheese 200g corn chips
1 onion, chopped 250g lite sour cream or natural lite yoghurt
  • Heat oil, then add onion and garlic, cook for 2 – 3 minutes’
  • Add the seasonal vegetables
  • Add the chilli beans
  • Add the can of tomatoes
  • Mix all ingredients in well and leave to simmer for 15 – 20 minutes, stirring occasionally
  • Place the corn chips in a dish
  • Cover the corn chips with the bean mixture and grated cheese
  • Place under the hot grill for 5 minutes to melt cheese if desired. Serve with lite sour cream or yoghurt if desired

NB: Seasonal vegetables to use are: carrots, celery, green pepper, courgette, broccoli or cauliflower

Frozen chunky vegetable mix with carrots, broccoli and cauliflower is great to use as a substitute
