Wheatgerm Muffins

WHEATGERM MUFFINS

1 ½ cup flour ½ cup sultanas
3tsp baking powder 1 egg
¼ cup sugar 125g melted butter
1cup wheatgerm 1cup milk

          Preheat the oven to 200 deg Celsius.

  • Sift the flour and baking powder into a medium-size bowl.
  • Add the wheatgerm and sultanas and sugar.
  • Melt the butter, then add the milk and egg and beat together.
  • Pour the milk mixture into the dry ingredients and stir until just mixed. DO NOT OVERMIX.
  • Spoon mixture into muffin tins to about ¾ full.
  • Sprinkle muffins with a mixture of 3Tbs sugar +1/2 tsp cinnamon (mixed together).
  • Bake in pre-heated oven for 10-15 minutes. Makes 12.
