WHEATGERM MUFFINS
| 1 ½ cup flour |
½ cup sultanas |
| 3tsp baking powder |
1 egg |
| ¼ cup sugar |
125g melted butter |
| 1cup wheatgerm |
1cup milk |
Preheat the oven to 200 deg Celsius.
- Sift the flour and baking powder into a medium-size bowl.
- Add the wheatgerm and sultanas and sugar.
- Melt the butter, then add the milk and egg and beat together.
- Pour the milk mixture into the dry ingredients and stir until just mixed. DO NOT OVERMIX.
- Spoon mixture into muffin tins to about ¾ full.
- Sprinkle muffins with a mixture of 3Tbs sugar +1/2 tsp cinnamon (mixed together).
- Bake in pre-heated oven for 10-15 minutes. Makes 12.
