Bean and Rice Salad

1 cup cooked brown rice ¼ cup poppy seeds
1 cup tin mixed beans 1 cup bean sprouts
2 cups sultanas 1 stalk celery, finely diced
½ cup currants ½ cup chopped parsley
¼ cup sesame seeds  
  • Mix all the above together and dress with the following dressing:
    ¼ cup oil 1 tsp curry powder
    2 tbs raisins ¼ cup cider vinegar
    Juice of a lemon  
  • Heat oil, add the curry powder and sizzle for a few seconds. Pour in the cider vinegar slowly, add the raisins and bring to the boil. Simmer for 5 minutes. Remove from the heat and add lemon juice. Allow to cool, then blend until smooth
