Bran Muffins (Diabetic)

Bran Muffins

1 cup wholemeal flour 1 cup chopped dates
2 cups bran 1¾ cup non fat milk
3½ tsp baking powder 3 tsp liquid sweetener

  Conventional oven

         Heat oven to 200 degrees Celsius and grease muffin pans

  • Measure dry ingredients into a bowl. Add the liquids and stir gently until just combined
  • Spoon into the greased muffin pans and bake for 10 minutes at 200 degrees Celsius

Microwave

  • Spoon into microwave proof patty pans. Cook 6 at a time for 2½ minutes on high

NB: 1 muffin = 1 portion or 1 exchange of carbohydrate
