Carrot and Orange Loaf
| 2 medium carrots, peeled and chopped roughly |
1¾ cup wholemeal flour |
| Rind of one orange |
2 tsp baking powder |
| ¼ cup brown sugar |
2 tsp ground cinnamon |
| ½ cup natural low-fat yoghurt |
1 tsp mixed spice |
| 2 eggs |
1 cup raisins |
Heat oven to 180 degrees Celsius
- Place the carrots, orange rind, sugar, yoghurt and eggs in a food processor and process 2 – 3 minutes or until smooth
- Lightly mix in the remaining ingredients
- Grease a loaf tin and spoon mixture into tin
- Bake at 180 degrees Celsius for 1 - 1¼ hours or until a skewer comes out clean
