Carrot and Orange Loaf

2 medium carrots, peeled and chopped roughly 1¾ cup wholemeal flour
Rind of one orange 2 tsp baking powder
¼ cup brown sugar 2 tsp ground cinnamon
½ cup natural low-fat yoghurt 1 tsp mixed spice
2 eggs 1 cup raisins

          Heat oven to 180 degrees Celsius

  • Place the carrots, orange rind, sugar, yoghurt and eggs in a food processor and process 2 – 3 minutes or until smooth
  • Lightly mix in the remaining ingredients
  • Grease a loaf tin and spoon mixture into tin
  • Bake at 180 degrees Celsius for 1 - 1¼ hours or until a skewer comes out clean
