Chinese Chicken Salad

2 boneless chicken breasts 2 spring onions
selection of salad greens 2 Tbs sesame seeds
1 large tomato  

Marinade

1 Tbs lemon juice 1 Tbs soy sauce
1 Tbs oil 1 Tbs chopped root ginger

Dressing

2 Tbs cider vinegar 2 Tbs sesame oil
1 Tbs sugar 2 Tbs soy sauce
1 Tbs Dijon Mustard  
  • Remove skin from chicken and slice chicken into strips
  • Mix together the ingredients for the marinade in a small bowl. Add chicken strips and refrigerate for approximately 1 hour
  • In the mean time, wash and prepare the salad greens, tear lettuce into bite size pieces, slice the cucumber. Slice the tomato into wedges and finely chop the spring onion. Arrange in a serving bowl or onto plates
  • Toast the sesame seeds by placing in a small saucepan on a medium heat and stirring until browned. Set aside
  • Whisk together all ingredients for the dressing and set aside
  • In a frypan, heat 2 tbs sesame oil and fry the chicken strips until well cooked (10 – 15 minutes). Remove from the heat
  • Toss chicken through the other salad ingredients with the dressing. Garnish with chopped spring onions and toasted sesame seeds.
