BAKED PASTA AND VEGETABLES
| 250g pasta (spirals/macaroni/shells) |
½ tsp salt |
| 200g broccoli (cut into flowerets) |
1 Tbs tomato paste |
| 400g tin tomatoes |
1 cup tasty cheese |
| 25g butter |
¼ cup pumpkin seeds |
| 3 Tbs flour |
½ tsp basil |
| 1 cup milk |

Heat oven to 200 deg C.
- Cook pasta in boiling water in a large pot. When almost cooked add the broccoli flowerets and cook another 2-3 minutes.
- Drain through a sieve and transfer to a lightly greased casserole dish.
- Drain the tomatoes, reserving the juice. Roughly chop the tomatoes and add to the pasta and broccoli.
- In a smaller pot, melt the butter, stir in the flour. Add about 1/3 of the milk and stir over the heat until mixture boils and thickens. Stir until smooth. The n add next 1/3 of milk and repeat until smooth again. Add last of the milk and the reserved tomato juice. Heat and boil again, stir until smooth. Add salt and pepper to taste as well as the basil and tomato paste. Add the cheese and stir until melted.
- Pour sauce over the pasta and stir to combine. Sprinkle the pumpkin seeds and a little extra cheese over the top and bake for about 15 – 20 minutes.
