Baked Potatoes

3-4 medium to large potatoes 1 tomato
250g lite sour cream 300g bacon (or ham)
3 mushrooms 1 small onion

(Ingredient amounts depend on how many you need)

  • Scrub potatoes clean, use a fork to prick holes in the potatoes, place on a plate.
  • Cook potatoes in a microwave for 10 minutes on high or an oven on 180 degrees Celsius for 40 minutes until cooked through.
  • Chop all other vegetables and bacon or ham.
  • Cook bacon and onion in a frypan until bacon is cooked.
  • Scoop sour cream into a bowl.
  • Add tomato to sour cream and mix in well.
  • Add cooked bacon and onion to sour cream and stir in well.
  • Cut the top off the potato.
  • Scoop potato out of all the potatoes and add to sour cream and mix in well.
  • Spoon mixture back into potato hollows, reheat if desired and place cut topping back onto the potato.
