Fried Rice
| 1 onion, chopped |
2 cups water |
| 3 rashers bacon, chopped |
1 cup rice |
| 1 cup mixed vegetables |
2 Tbs soy sauce |
| 4 Tbs oil |
1 tsp garlic, crushed |
| 2 eggs, beaten |

- Bring water and 2Tbs oil to the boil and stir in rice. Simmer covered for 20 minutes, then drain
- Heat 2 Tbs oil in a large frying pan. Add beaten eggs and cook until firm. Put on a plate
- Put mixed vegetables in a cup and cover with boiling water. Leave for 2 minutes, then drain
- Fry bacon, onions and garlic
- Add rice, eggs and mixed vegetables to bacon and cook for 2 minutes
- Add soy sauce and mix
NB: Serve hot. This is even better if you cook the rice the day before, so it’s a great way to use left over rice
