Fried Rice

1 onion, chopped 2 cups water
3 rashers bacon, chopped 1 cup rice
1 cup mixed vegetables 2 Tbs soy sauce
4 Tbs oil 1 tsp garlic, crushed
2 eggs, beaten  
  • Bring water and 2Tbs oil to the boil and stir in rice. Simmer covered for 20 minutes, then drain
  • Heat 2 Tbs oil in a large frying pan. Add beaten eggs and cook until firm. Put on a plate
  • Put mixed vegetables in a cup and cover with boiling water. Leave for 2 minutes, then drain
  • Fry bacon, onions and garlic
  • Add rice, eggs and mixed vegetables to bacon and cook for 2 minutes
  • Add soy sauce and mix

NB: Serve hot. This is even better if you cook the rice the day before, so it’s a great way to use left over rice
