Meatballs

1 onion, grated 1 tsp garlic salt / stock powder
½ cup carrot, grated 1 cup breadcrumbs
500g lean minced beef 2 Tbs cold water
¼ cup chopped parsley 1 egg
1 tsp minced garlic 1tsp curry powder
1 tsp dried basil ½ cup rolled oats

           Preheat oven to 180 degrees Celsius.

  • Place all ingredients in a bowl and mix well
  • Shape into balls about the size of a walnut
  • Place one layer on a plate that is microwave proof. Microwave on high for 4 minutes.

Choose one of the following sauces to bake meat balls in

Sauce 1

1 tin pineapple 1 Tbs vinegar
2 Tbs cornflour 1 cup beef stock
2 tsp soy sauce  
  • Measure cornflour, soy sauce, vinegar and beef stock into a saucepan and mix until smooth. Stir in drained pineapple juice and 1 tbs brown sugar
  • Bring to the boil and stir until thickened. Add pineapple pieces and pour over the meatballs. Bake in oven for 20 minutes and serve with rice or noodles

Sauce 2

1 onion 1 cup water
2-3 cloves of garlic 1tsp oregano
1 small can tomato paste 1 tsp basil
  • Dice 1 onion and crush 2-3 cloves of garlic. Sauté both in a little oil in a saucepan
  • Add tomato paste, water, oregano, basil and simmer for 15 minutes. Pour over meatballs in on ovenware dish and bake for 20-30 minutes.
