Meatballs
| 1 onion, grated |
1 tsp garlic salt / stock powder |
| ½ cup carrot, grated |
1 cup breadcrumbs |
| 500g lean minced beef |
2 Tbs cold water |
| ¼ cup chopped parsley |
1 egg |
| 1 tsp minced garlic |
1tsp curry powder |
| 1 tsp dried basil |
½ cup rolled oats |
Preheat oven to 180 degrees Celsius.
- Place all ingredients in a bowl and mix well
- Shape into balls about the size of a walnut
- Place one layer on a plate that is microwave proof. Microwave on high for 4 minutes.
Choose one of the following sauces to bake meat balls in
Sauce 1
| 1 tin pineapple |
1 Tbs vinegar |
| 2 Tbs cornflour |
1 cup beef stock |
| 2 tsp soy sauce |

- Measure cornflour, soy sauce, vinegar and beef stock into a saucepan and mix until smooth. Stir in drained pineapple juice and 1 tbs brown sugar
- Bring to the boil and stir until thickened. Add pineapple pieces and pour over the meatballs. Bake in oven for 20 minutes and serve with rice or noodles
Sauce 2
| 1 onion |
1 cup water |
| 2-3 cloves of garlic |
1tsp oregano |
| 1 small can tomato paste |
1 tsp basil |
- Dice 1 onion and crush 2-3 cloves of garlic. Sauté both in a little oil in a saucepan
- Add tomato paste, water, oregano, basil and simmer for 15 minutes. Pour over meatballs in on ovenware dish and bake for 20-30 minutes.
