Ocean Pasta
| 250g pasta shells |
1 onion |
| 2 tsp garlic, crushed |
1 Tbs oil |
| ½ large green pepper |
½ tsp oregano |
| 300g tomato puree |
½ tsp basil |
| 1 tin smoked fish |
1 tsp brown sugar |
| 1 carrot |
3 cups water |
- Put 3 cups water and 1 tsp salt in a large saucepan and bring to the boil
- Add pasta and cook uncovered for 7 – 10 minutes until firm
- Rinse pasta with hot water and drain well into a sieve
- Chop onion and crush garlic
- Dice the carrot and slice the pepper
- Heat oil in a saucepan. Add garlic, onion, carrot and pepper and cook for about 5 minutes
- Add the tomato puree, oregano, basil, brown sugar, drained fish and water
- Add the cooked pasta
- Stir all ingredients together and simmer for 5 minutes. Serve hot
NB: A tin of tuna or left over cooked chicken can be used instead of fish.
Pasta spirals can be used as a substitute for pasta shells.
