Baked Potatoes
| 3-4 medium to large potatoes |
1 tomato |
| 250g lite sour cream |
300g bacon (or ham) |
| 3 mushrooms |
1 small onion |
(Ingredient amounts depend on how many you need)
- Scrub potatoes clean, use a fork to prick holes in the potatoes, place on a plate.
- Cook potatoes in a microwave for 10 minutes on high or an oven on 180 degrees Celsius for 40 minutes until cooked through.
- Chop all other vegetables and bacon or ham.
- Cook bacon and onion in a frypan until bacon is cooked.
- Scoop sour cream into a bowl.
- Add tomato to sour cream and mix in well.
- Add cooked bacon and onion to sour cream and stir in well.
- Cut the top off the potato.
- Scoop potato out of all the potatoes and add to sour cream and mix in well.
- Spoon mixture back into potato hollows, reheat if desired and place cut topping back onto the potato.
