Fish Chowder

2 Tbs butter 2½ cups milk
2 pieces of bacon ¼ tsp pepper
1 onion ¼ tsp dried herbs
4 potatoes 300g skinned and boned fish
1 carrot parsley to decorate
  • Cut bacon, onion and fish into small cubes
  • Peel and cut carrots and potatoes into small cubes
  • In a saucepan sauté bacon and onions in butter
  • Add potatoes, carrots, milk, herbs and pepper
  • Bring to the boil, reduce heat and simmer for 20 minutes
  • Add fish and cook for 10 minutes more
  • Sprinkle with parsley and serve hot with a French bread stick

NB: Substitute mussels for fish to make Mussel Chowder or
use mixed seafood like shrimps, squid and fish to make up the 300g of fish required
