Fish Chowder
| 2 Tbs butter |
2½ cups milk |
| 2 pieces of bacon |
¼ tsp pepper |
| 1 onion |
¼ tsp dried herbs |
| 4 potatoes |
300g skinned and boned fish |
| 1 carrot |
parsley to decorate |
- Cut bacon, onion and fish into small cubes
- Peel and cut carrots and potatoes into small cubes
- In a saucepan sauté bacon and onions in butter
- Add potatoes, carrots, milk, herbs and pepper
- Bring to the boil, reduce heat and simmer for 20 minutes
- Add fish and cook for 10 minutes more
- Sprinkle with parsley and serve hot with a French bread stick
NB: Substitute mussels for fish to make Mussel Chowder or
use mixed seafood like shrimps, squid and fish to make up the 300g of fish required
