Lentil and Tomato Soup
| 250gm red / brown lentils | 1 bay leaf |
| 440 gm can tomatoes | ½ tsp mixed herbs |
| 2 rashers bacon, chopped | 2 Tbs tomato paste |
| 3 stalks celery, chopped | 4 cups chicken / vegetable stock |
| 2 onions, chopped | black pepper to taste |
| 2 carrots, diced | chopped parsley to garnish |
| 2 – 3 cloves garlic, crushed |
