Lentil and Tomato Soup

250gm red / brown lentils 1 bay leaf
440 gm can tomatoes ½ tsp mixed herbs
2 rashers bacon, chopped 2 Tbs tomato paste
3 stalks celery, chopped 4 cups chicken / vegetable stock
2 onions, chopped black pepper to taste
2 carrots, diced chopped parsley to garnish
2 – 3 cloves garlic, crushed  

 

  • Place all ingredients, except parsley, in a large saucepan. Bring to the boil, then reduce heat, cover and simmer, stirring occasionally for 1 hour or so.
  • Sprinkle with chopped parsley and serve
