Potato Puffs

3 slices of sandwich bread 1 egg
1 cup mashed potatoes 1 cup cheese, grated
1 – 2 Tbs onion pulp ½ cup bacon, chopped
salt and pepper to taste small pinch of paprika

         Pre heat oven to 190 degrees Celsius.

  • Peel, boil and mash about 2-3 potatoes
  • Butter the bread and cut off the crusts. Cut each piece of bread into quarters
  • Press the squares of the bread (butter side down) into the bottom of muffin tins
  • Make the onion pulp by scraping across the surface of the cut onion with a teaspoon or by grating it
  • Mix the mashed potatoes with the onion pulp, cheese, egg and bacon then season
  • Sprinkle with paprika. Bake for 20-30 minutes until bread cases are light brown.
