Silverbeet Quiche

Silverbeet Quiche

1˝ cups cooked silverbeet 2 eggs
˝ tsp ground nutmeg 1 small onion
2-3 rashers bacon 4 sheets of filo pastry
1 cup cheese, grated  

         Pre heat oven to 200 degrees Celsius.

  • Chop onion and bacon, then sauté in oil
  • Cook silverbeet until leaves are just wilted, about 5 minutes
  • Drain silverbeet
  • Measure 1˝ cups of silverbeet (if you are not using a food processor chop the silverbeet into small pieces)
  • Put silverbeet into either a bowl or food processor bowl then add bacon and onion
  • Add cheese, eggs and nutmeg, process for 10 seconds or mix well with a fork
  • Line a flat dish with 4 layers of filo pastry each lightly brushed with oil
  • Pour mixture into the pastry-lined flat dish
  • Cook in an oven for 20 minutes or until firm
  • Remove from oven and cut and eat while hot
