Silverbeet Quiche
| 1˝ cups cooked silverbeet |
2 eggs |
| ˝ tsp ground nutmeg |
1 small onion |
| 2-3 rashers bacon |
4 sheets of filo pastry |
| 1 cup cheese, grated |

Pre heat oven to 200 degrees Celsius.
- Chop onion and bacon, then sauté in oil
- Cook silverbeet until leaves are just wilted, about 5 minutes
- Drain silverbeet
- Measure 1˝ cups of silverbeet (if you are not using a food processor chop the silverbeet into small pieces)
- Put silverbeet into either a bowl or food processor bowl then add bacon and onion
- Add cheese, eggs and nutmeg, process for 10 seconds or mix well with a fork
- Line a flat dish with 4 layers of filo pastry each lightly brushed with oil
- Pour mixture into the pastry-lined flat dish
- Cook in an oven for 20 minutes or until firm
- Remove from oven and cut and eat while hot
